Sherry Listing

Sherry comes only from southern Spain and, since 1996, the name has been restricted to the wines from the sunny Jerez Region. Palomino is the classic grape, though the style depends on how it is matured. Fino and Manzanilla develop a foamy layer of yeast called "Flor" which protects the wine from air and gives a nutty tang. Darker styles like cream get their taste from gentle oxidation.
