It gets its sparkle from a slow second fermentation in bottle in deep chalk cellars. There are lots of alternatives made by the same method with different grapes, like Cava or Saumur. Other sparklers like Asti or Vin Mousseux get their bubbles from a fermentation in tank - great for really fresh grapey flavours.
